Wednesday Filled With Words--Polka Dot Knee Socks--Prayer Request


I wish I had polka dot knee socks . . . it's been one of those weeks; months; years.  At least for me.  And, well for my daughter too 
but right now she can happily say this little polka dot knee sock girl could be her.  I am happy and proud of her.  Many positive things are happening for her.  It is way past time.  

Me....I am praying and waiting and trying to be patient.  While I wait I do this . . .



Started this one to put in the shop or sell at the Seniors Fair this fall. But, it looked great on the bed. It is bigger now. I need to take another snap before I quilt it. Inspiration came from a snap on Pinterest. I didn't save it and haven't been able to find it since!

This one will go in the shop. It will also be bigger. I am almost done with it. I am trying to be better about taking shots of the quilts that I am working on. I have a bunch of tops ready to start quilting.

Yep,a garden and a library and a sewing room. What else do you need. Well actually alot more but these things make me happy. I miss a garden. I am struggling right now with being satisfied with my patio garden and my dining room sewing area. We've been looking at apartments and houses because our lease will be up soon. We really want to move closer to our daughter. We want something a little nicer with an extra bedroom for them to visit. We are trying to be patient but it is so hard. To make this happen I have to find a job. It is so hard. I have been on so many interviews. It is getting harder and harder to be upbeat. I need to be patient but it is just so tough. It is so weird because all last year I prayed that I would have to get a job. And now when I know I need one and I am resigned to working I can't find one. I wonder if God's answered that prayer from earlier because I need to be home to focus on just being a wife. But the other part of me wants to be near and with our daughter and grandson. And so, I pray. And I wait. And I ask God to give me direction.
And I try to encourage. And I look for things that make me smile. I hope that when you come here you see something that makes you Smile. And if you wouldn't mind would you say a prayer for me today.

When Life Gives You Lemons

Make pie.  That is if you have a recipe. Yes life has given me lemons the last few days.  But I was plannin' this post anyway. 
Computer is still acting up when I post. But no other time.  Weird. 

Do you have a fabulous Lemon Pie Recipe?   Or maybe a famous one?

Yummy! Yum!   I searched Pinterest and found a lot more.  But I am wondering if you'd share your recipe?

Or maybe a tip? 

Here's mine.  Ever wonder how to get a meringue like this?

Mile-High Lemon Pie
 This one's Martha Stewarts.
Mine tip is simple. 
First you really, really need a stand mixer.  Kitchenaid is best!
Second this is the simple part lots of eggs!  I've even double the amount!  Mix like crazy and you have a pie like the one above.

Here's Martha's method/recipe . . .
Ingredients


All-purpose flour, for dusting (Pie Dough) Pate Brisee 1 large egg 2 tablespoons heavy cream 1/3 cup cornstarch 1/3 cup sifted cake flour 1/4 teaspoon salt 1 1/4 cups sugar 5 large egg yolks, lightly beaten 1/2 cup fresh lemon juice 2 tablespoons lemon rind 4 tablespoons unsalted butter, cut into small pieces 7 large egg whites 3/4 cup sugar 1/4 teaspoon salt Directions

1.Step 1Heat oven to 400 degrees. On a lightly floured surface, roll out dough to a thickness of 1/8 inch, and use to line a 9-inch pie tin. Crimp the edges decoratively. Chill until firm. In a small bowl, whisk together egg yolk and cream to make a glaze. Prick the bottom of the shell with a fork, brush the top edges with the glaze, and line with parchment paper. Weight the shell with pie weights or dried beans, and bake until the edges begin to brown, 10 to 15 minutes. Remove paper and weights; continue baking until golden brown, 7 to 10 minutes more. Let cool.
2.Step 2To make filling, combine cornstarch, cake flour, salt, and sugar in a medium nonreactive saucepan over medium heat. Gradually add 2 cups cold water. Bring the mixture to a boil, whisking constantly, about 4 minutes.
3.Step 3Remove the pan from heat. Temper egg yolks by beating a small amount of hot mixture into the yolks before adding them to pan. Cook over low heat for 5 minutes.
4.Step 4Remove the pan from heat, and whisk in the lemon juice and rind. Add the butter one piece at a time. Pour the mixture into a large bowl, and let cool.
5.Step 5Pour the filling into the cooled shell and refrigerate, covered with aluminum foil, until firm, about 1 hour.
6.Step 6To make the meringue, combine egg whites, sugar, and salt in a heat-proof bowl. Set over a pan of simmering water; beat until warm and sugar is dissolved. Remove bowl from heat; whip into stiff peaks.
7.Step 7Spread the meringue over pie so that it touches crust all around. Broil until brown, about 2 minutes, watching constantly. Serve at room temperature.

     So I am wondering is it my computer or blogger?  Couldn't complete my post this morning. 
This happened a few days ago.  It was the day my computer came back from the geek. 
Seems fine now.   Let's see . . .
So this morning I could load a photo but then I couldn't type or add a link.  It wouldn't let me add the link on that post just now either.  This has never happened before. 
So, wonderin' can I add a link here.  Let's see if I can find a cool blue and link to Sally for a test.                                                                                                                                                                                                   


Acting really weird again.  My cursor won't move.  I can only move it with the arrows.  Let's see if we can link.  Oh btw I love shutters.   I found this pic on Pinterest.  I love holleyhocks too.  Someday I'll have a holleyhock garden.  Let's see if we can link.   Click here to visit Sally.  Nope weird.  Same problem as this morning.  My mouse will not click over the words to highlight.  Now the weird thing is it works in word and in emails.  So can it be blogger?   Is anyone else having a problem?

I wanted to share this pic.  I was planning on doing something new with the blog.
I guess it all depends if the computer and/or blogger cooperates.
I was planning on choosing a color each month and adding photo's and anything I can find to the posts to highlight the months color. 
Came up with the idea because I googled Yellow the other day and some really cool and interesting photos
came up that I wanted to share.
So for the rest of the month I am going to share some lovely yellows.

The Post That Might Be

The computer is acting up.  Only half of this post completed.
I can't manually move my cursor.  So I can't correct spelling. 
One frustration after another.  I quess for some reason it isn't
meant for me to post.

My Dream Saturday--Making It Sweet

What would make your Saturday sweet? 

Maybe starting with . . .

This is a dream for me.  Sure would be sweeeet. 

And then maybe . . .
 A little lunch.

And of course a little (or maybe a lot) shopping . . .




Starting here of course at my favorite Antique Shop/Mall.

And then maybe going to what we call Main Street.  Lot's more shops!

  Gotta be careful though . . .


There is an ocassional gun fight.  We're in Texas.  We don't put up with people messin' with our banks or stealin' our horses! 

Maybe it's time to head home! 

Still think it would be a sweeeeeeet day!

Do You Eat A Helathy Lunch?

probably about the only food i cannot say no to...cream cheese and crackers~i'll eat it up! Sadly my lunch wasn't healthy.  I mean hello cream cheese and crackers.  Seriously!  it wasn't this pretty either.  All pics found on Pinterest.

Do you find yourself realizing it is 12:39 and you haven't eaten yet today.  And your stomach is growling and you need food?
Crackers w/ cream cheese And you don't have something like this all prepared for you.   Because you stay at home?  Because that aren't any kids or husband around so you just grab something  quick and easy.

I guess if I thought ahead I could do something like this.  Have little lunchs ready for myself so I could take just a few minutes revive myself and then get back to what I really want or need to do.

cherry tomato, olive, cream cheese and crackers----only because I like ladybugs, not because I lilke tomatos.

   My lunch today wasn't even cute!  No tomatos.  No olives which I wouldn't eat anyway.  Although Pioneer Woman has encouraged me check out her enchilada recipe.  I tried it the other night best enchilada's I've ever eaten.  And with diced black olives . . . sorry chasing a rabbit trail....

So, I am wondering do you eat a healthy lunch?  Just kind of wanting some ideas from you.

and btw...I didn't even like the crackers.  Not a fan of albertsons store brand saltines. Have you tried Krogers?  Taste just like Premium saltines used to.  Just sayin'

Broken--Five Minute Friday

10 ways to reuse broken crayons  Broken makes me sad.

I cried when I was a child when my crayon broke. 

When things are broken.  They are never the same.  

I'm a big girl now I don't cry over a  broken dish.  Or a broken pot. 

Add a little glue and it is good as new.  But it isn't the same. 

Some things.  Some people need to be broken. 

Because it is by being broken then you can be repaired. 

By being broken before God you can be renewed. 

I pray for brokeness. Not for myself.  I have been broken before God.  But I realize as I think about I should pray for myself that I'll continue to be broken everyday.  

But.  I pray for someone else.  Someone that needs God's healing.

Broken is sad.  But broken is good.

Is Yours The Best? I am on a search!

You see I don't have a good recipe.  I have searched and just don't know which one to try. 
So, I am calling on you to help! 
Because today I am eating this . . .
Swanson's frozen Chicken Pot Pies. Who else thought they were a special treat for when Mommy and Daddy were out?  (1957)  Call me weird but.  I love Swansons Turkey pot pie.  My Cowboy cracked up when we were shopping on Saturday.  We went across town to a Mexican market.  Which we love btw...but that's another post. And what did I find but Swanson. I was jumping up and down and running over and saying 
"Look what I found" (their not at any market around our house...and I don't like Morton. Ick!) 
I bought two.  I ate one yesterday.

And, just in case you don't have a good recipe yet!  They were only 69 cents. 

Now I wonder if I can actually beat that price by making my own.  But, by making my own with the best recipe ever I can probably have much healthier ingredients. 
Ingredients for chicken pot pie So weather your recipe calls for fresh, frozen or canned veggies.  I wannna try it!

Easter Bunny Chicken Pot Pie  Ingredients  1 lb. bag of frozen cubed chicken, thawed  1 cup chopped cooked carrots  1/2 cup frozen petit green peas, with a 8 set aside  1/2 cup sliced celery (optional)  1/3 cup butter  1/3 cup chopped onion  1/3 cup all-purpose flour  1/2 teaspoon salt  1/4 teaspoon black pepper  1/4 teaspoon celery seed  1 can of chicken broth  2/3 cup milk  3 (9 inch) unbaked Pillsbury pie crusts. Decorate with green onion, carrots, & peas!  Seriously Cute!
